Category 1: Baguette and Savory Bread

• The quantity required is:
– 3 baguettes
– 2 breads for freestyle 1
– 2 breads for freestyle 2

 

Baguette (fixed)

• The baguette should:
– Be at least 55cm long
– Be all the same length
– Be 250g baked
– Have 5 cuts
– Have no visible flour
– Have a crispy crust
– Have open crumb (big et irregular holes)
– Cream color crumb is prefer over pure white

 

Variety bread (freestyle)

• The objective of the variety bread is to allow the candidate to express his/her creativity.
• This can be done with savory bread of various shapes, filling and topping.
• The bread must:
– Be savory, which means salty or neutral in taste. Sweetness shouldn’t be the main taste, although including fruit are authorized.
– It must be crusty
– Be 300g baked
– Be all the same weight inside each type

 

• The bread can:

– Have fruits or whatever inclusion in it
– Be cut (scoring)
– Have any shape
– Be molded or not

 

Category 2: Viennese and Sweet Bread

• The quantity required is:
– 5 croissants
– 3 breads for freestyle 1
– 3 breads for freestyle 2

 

Croissant (fixed)

• The croissant should:
– Have all the same shape
– Be 40g baked
– Have no syrup nor any decoration
– Have a nice layering
– Have open crumb (big et irregular holes)
– Cream color crumb is prefer over pure white

 

Variety sweet bread (freestyle)

• The objective of the variety sweet is to allow the candidate to express his/her creativity.
• This can be done with sweet bread or Danish of various shapes, filling and topping.
• The sweet bread must:
– Be sweet
– Be 70-90g baked (including all topping and filling)
– Be all the same weight inside each type

 

• The sweet bread can:
– Have cream fruits or whatever inclusion in it
– Have any type of sugar or fat
– Have any amount of sugar or fat
– Be layered (Danish) or not
– Have any shape as long as the weight is respected

 

Category 3: Artistic Piece-China Theme

 

• Rules of category 3: Artistic piece
• One piece on the theme of China; it can be related to anything that represents China: symbol, food, music, history, map, etc.

• The artistic piece must:
– Be included on a base of 30cm x 30 cm; height and weight is unlimited
– Only be made out of bread ingredients (flour, water, sugar, food grade coloring agents, etc.)

 

• The artistic piece can:
– Be of any color
– Be composed of separate element
